Hmm... In my opinion, the 7 best are the 6 made by FromSoftware (DeS, DS1, DS2, DS3, BB and ER), then Lies of P. But each to their own.
Agree, the horseback combat is quite simple compared to unmounted, and for a first attempt, that's ok. There are clearly bosses meant to be fought on horseback, but there aren't so many that by the end the horse combat felt boring.
That said, now that they have a base to build from, they need to make horse combat more full featured in future games...From's history shows they do not just rest on their gameplay laurels...each game feels like a good improvement on the last regarding combat.
