It's not downgraded. It's just that you're comparing gameplay to cutscenes.
Cutscenes are still realtime (which is amazing), but they have much greater control over everything. They can use much higher quality lighting, maybe shaders etc. This is what I think it is. You can see during the gameplay that the graphics don't look as mindblowing as the cutscenes (except for some things like the grass and trees and the lighting in that green area).
Those characters look insanely good, but I'm pretty sure some of it is pre-rendered CGI cutscenes like in Infinite Warfare. Hard to tell because I think the in-game versions of characters will also look amazing.
first off, these are total numbers. Consoles probably account for majority of them. Second, I think we can all agree that it would have done better on PC had it launched on Steam.
That said I'm sure the PC numbers are good enough and they'll keep growing steadily for a few years anyway.

These ship sales are what funds the development you dolts. If you don't like that, fine, but it is what it is - a massive budgeted project that rides on ship sales like these. Funny thing is with all these sales they're still probably burning through their cash faster than they're bringing it in.

There are plenty of games that focus on immersion and the like, and they are very successful.

Rockstar spent 8 years and up to 2000 people (at peak) making their last game (and that was after GTA5 and GTA Online). Most impressions have been very positive. The game is not massive in scope. This is not a typical AAA production, it's more like AA. It looks like it will be a good game for what it sets out to do.
