Those characters don't fit a Back N. Time theme really. They already said many of those characters you named are coming in future seasons. Just be patient.

Before you complain you should probably read the blog.
N. Brio, Nina Cortex, and Komodo Moe were officially announced with more to come in this blog post lol. Lab assistant is also being shocked to death at one of the starting lines. I'd rather him be a obstacle on a future course than a racer. Koala and Rilla will obviously come. Feel more like you're just shooting the same names ppl say at this point. As long as brio and Nina come, the rest doesn't matter that much really. Baby t makes sense as polar and pura which were mounts are racers already. Baby crash and coco are just so they fit the theme.

Can anyone tell me what happens with previous season content for those who haven't bought the game yet? Will it be unlockable in some form?

The pit stop items will go to the pit stop in the future, but from what was said it may not be for a while. Think characters like Tawna will be too which were unlocked by completing missions
