In Cyberpunk 2077's 60fps performance mode, there are differences. In three of the four benchmarks, PS5, Xbox Series X and Series S are quite closely matched - with just the sense that the Series X isn't quite as solid with its lock to 60fps. In a fourth benchmark though, the load increases and PlayStation 5 can run at a maximum of 12fps to the better compared to Series X.

Well... it seems that PS5 is a better designed machine, with better dynamic hardware escalation than fixed Xbox Series design. But, really, it seems the problem is with software environment for developers, where tools tell where and when to squeeze the system. PS5 DEV kit does it in a more automatic way than XDK, for the moment. Yes, Xbox Series S can be a time consuming pit for smaller teams or big projects like Cyberpunk 2077, but Microsoft are trying hard to improve. Also, Unreal Engine 5.3+ have tools to help on this. Let's hope Unity and others invest on making development a nicer job, because this can also apply to Windows and other platforms as experience and third party tools get also better.
