I absolutely love Stellaris, but you really need to invest some serious time in to it. A good run through on fast takes a solid 8-12hours, with a lot of pop management in the middle game which makes it somewhat tedious.
The biggest change for me would be if you can get to a point where you can just auto-best the population.
There are some races where, once you get to a solid economy, you can just switch off pop production, but they need to include pathways for all to achieve this.
