Pokémon: Let’s Go, Pikachu!/Eevee! will NOT support the Pro Controller
Unfortunately, those who use this controller or prefer the other mainline Pokemon games will have to stick with a Joy-Con or the Pokeball Controller. It's a shame, adding a button press option or making use of the Pro Controller's Gyro would solve this problem.
