Resident evil: Remake really was a brand new game to be completely honest, that game added so much I don't understand why capcom didn't use that as a precedent for future games.
What would be the point, they've already did it. Just focus on doing Resident Evil 3 and then do Code Veronica as Resident Evil 4 but with Leon instead of Chris going to save Claire.
This new timeline can be for old school RE fans and the original timeline can be first person now. Both audiences are happy, both audiences win.

I'd cast my vote for Veronica remake. That game simply doesn't get enough attention, and it is the "real" Resident Evil 3 after all.
Nemesis had a 3 slapped on it, merely for Capcom to satisfy a contract they had with Sony for exclusivity on the original Playstation.
