Because for like anyone our age (I suppose most devs are in their 30), Mario pretty much is video games mascot in general. It's an hommage to what started it all.

Because Mario is incredibly popular, and the devs wanted to throw a shout out to the games. It's as simple as that. It doesn't matter what system they are on. If they like the games, they can throw it in to pay tribute to them.
