I'm fairly sure it happens because the bullet comes out from the weapon and 'curves' to hit whatever's in the center of your screen. You know, because the weapons are held a bit off to the side.
An HD resolution for the camera would be unnecessary and probably kick the price of Kinect up to 250 bucks.
Granted, it can use a better resolution. Something around 500p?
And 60fps is also not needed. The software should be able to figure out where the body parts are in between those frames.
The demo's pretty awesome - had some fun times with it, but I'd say its a good rent for the majority of gamers.

What's important is the AI's reactions in combat - especially the moves they make. AI can have the best movement/positioning tactics ever invented, but if you shoot at them and all they do is play whack-a-mole with you, where's the fun in that?

The data collected wouldn't be pixels, it would be numbers. It would not be a 'hell of a lot of data'.
Hell, actual game code is never that big. It's just a bunch of numbers and text. It's video files, texture files, ad audio files that take up space.
The idea of adaptive AI was sort of explored in L4D. It's probably the best way to up replay value of a single-player game.

There are different magnitudes of cheating going on in Halo Reach.
There is challenge resetting - not a legit way of getting credits
And there is straight up cheating - modding game files and such to give you an unfair edge in the battlefield - superspeed, increased damage, invulnurability etc.
And probably some more, which I'm not aware of .
