I foolishly tried to kill a giant too when I first saw one. After that, I though I was in for it when I came across another one in the mountains, but I walked away without drawing my weapon and even though he saw me he didn't attack. They don't seem too aggressive, so if you leave them alone they'll leave you alone too.
I've leveled up my Sneak and with my Shrouded Gloves I can now one-shot giants with dual daggers. 60x damage is where it's at. :)
I beat a giant at level 14, with an axe and flames....fuck yeah, it's a lot more rewarding than killing a dragon honestly...
