The story behind the Force Unleashed is one of the most illuminating pieces of journalism that exposed this.

The original Star Wars was not very good until it was recut by his wife. Then Larry Kasdan wrote Empire and Revenge of the Jedi that had a planet of Wookies fight the empire.

But he changed them to Ewoks and called it Return of the Jedi.

Yeah, I've read or seen about the other stuff. I seem to remember there being a guy behind some of the editing too as I remember seeing how they did that bit with the Tusken Raider where he shakes his staff in the air (never actually did that; it's just the frames of him raising the staff played backwards and forwards).

Wookies would have been badass. Wookies going buckwild on stormtroopers!
