They didn't want to release it until it becomes acceptable for "next-gen" games to run at lower resolutions again. The RTX in Minecraft can bring all of the AMD 6000 series GPUs to a crawl. With too much RT going on even at 1440p the 6800 XT / 6900 XT can be unplayable, which the Series X cannot compete with meaning 1080p with Raytracing would be an only option, and after the whole 4K marketing bandwagon, it would be another counter marketing point to their brand.
It will probably release sometime in 2023 / 2024 when they are ready to releases something like a Series X Pro with AMDs RDNA 3.0 which will have significantly better Ray Tracing capabilities and be able to achieve Dynamic 4K @ 60fps (1440p - 4K), meanwhile the Series X would be 1080p @ 60fps thanks to FSR updates, with the Series S sitting around 720p @ 30fps or 60fps.
