Honestly, she's probably less than 7' easily, likely closer to 6'. Unless they assume all her bedroom furniture is "her" size, but the rest of the house isn't. It would make the other ladies closer to 7' if she was also 8'.
At the end of the demo she comes through the big double doors and is as tall as the door frame with those perspectives being shown and in another trailer they show her bending over like she's touching her toes just to fit through an interior door. She's definitely not "less than 7' easily". Or they have special 4' tall doors just for the hell of it.

I think her "greater size" in that scene isn't necessarily her true form but the same reason the other ladies can turn into hordes of insects, it's a supernatural effect. If you take only one scene, perhaps, but the rest doesn't line up.

You can be tall and look normal height while sitting especially if all the length is in your legs which is possible in real life and also could be the case here.

You gave 2 examples just like I did. So this could go either way. But her bending over 90 degrees to fit in a door really convinces me that she's AT LEAST 7' tall and if becoming taller is an alternate form then Capcom has really lost their touch on interesting antagonists.
