Naughty Dog literally did that with their last game (Uncharted 4). There were technical difficulties. I'm guessing it might surprise you to know that Naughty Dog is a studio that learns rather quickly from the past.

If this was Last gen then i would be little skeptical but we know Naughty dogs have always delivered the best of the best Games (Ya go ahead hit the disagree button since you're salty and know its true)
Uncharted 4 retail version looked better then stage demo too so ya LOU 2 gameplay was real deal with it
and Scripted is not Fake

The reason it was scripted because ND wanted to show everything in that demo from Enemy AI to Ellie's new mechanism and for sure all will be there in the final game and even better Also at the ND's Colosseum they disclosed so many new stuffs that they have done in this game sounds amazing

Those smooth animations and transitions is a result of "Motion mapping". For Honor was amongst the first to use this technique and it's since been adopted into The Last of Us 2's pipeline and vigorously overhauled and pushed to new heights...

Naughty Dog has said it's scripted, but not in a bad way. It's more like the demo being choreographed to include different gameplay mechanics that may not all appear in a quick demo area like that. It's meant to show off as much as possible in a short period of time, also, they wanted to make sure the demo player didn't die at all, as no one wants to watch a loading screen. It's all real, the demo was just choreographed, and that's perfectly fine.

That's what everyone is calling fake. There's small things like the enemy that fell to his knees and she just happen to trigger a cutscene on this random enemy. When she crawls under the non level funneled truck, that entire sequence with the enemies looking under the truck and the other one grabbing her came off as fake. That whole sequence in the convenient store after she shot the explosive arrow and went up to cut the enemy against the shelf looked incredibly too situational to be real. I know the basic game that we saw was real but the scripted fight parts are very out of place for being real.

So they choreographed the play through several times to make sure that these systems are showcased.... To corral, means to funnel or cohearse, meaning they have to do something within the gameplay itself on a matter of "IF/THEN" statement systems... "if I do this against here, when this guy does that, then this result happens..." It's naughty Dogs contextual events on full display, something we saw on PS3 with the first game...

For crying out loud, Neil Druckmann said it in an interview with Kotaku

"“Those were all real systems,” Druckmann said to Kotaku. “So at an E3 demo you take complicated systems that are random and we’re making them deterministic and we play it a lot and rehearse it and choreograph it, so we’re showing off very specific things. But those are all real systems that players will experience when they play the game""

Don't confused choreographed with Scripted... Scripted would be a cutscene, scripted would be set piece. What was shown as gameplay in the trailer was REHEARSED AND REHEARSED and rehearsed to highlight all the new features to combat that's been added... And then when the best play through was achieved, it was then recorded and presented as the presentation.

The first last of us demo featured interactions that were nowhere in the final product or were altered drastically. Characters do not communicate anywhere to that level shown in that demo as ND implies. ND even lied in an interview detailing the AI and got caught but everyone shrugged it off since "lol best game of the year!" It's the exact same situation here, but of course I don't expect many people to call them out on it. It's a waste of time, when you have a massive group of fanboys using mental gymnastics ready to fire at any non believers.

CD Projekt showed their game behind closed doors and those who got to see it said it was amazing.

Rockstar also showed off their game to ign and a few other selected few and people we're amazed.

Now the reason I brought these 2 developers up was because they are very well respected developers in the industry and naughty dog is right up there with these two big dogs. Naughty dog showed gameplay to the world at e 3 for a reason, to show that their studio can compete with the best of the best at e3. Right now the top 2 games that are blowing peoples minds at e3 is CD Projekts game and the last of us 2 and crazy that ghost of tsushima is also getting tons of love and Spiderman too but everyone already knew Spiderman was going to be good.

All I'm saying is if u won't ever question rockstar or CD Projekt then why are we even questioning naughty dog? People are acting like naughty dog are small fries developers lol.

They did the same thing with the first last of us demo at E3. It had all these interactions with enemies that got cut in the final game or altered drastically. While the basic game is still there intact, the many things they showed like struggling with a shot gun wielder enemy who fires a shot, Slamming a guy against a wall and bashing his head into the cabinet next to it, are not actually in the game. They even admitted in the Last of us 2 demo all those sequences and enemy interactions were forced to behave in a deterministic way so they could show off a clean demo each time. I know the basic game will be fine, it's just those interactions with enemies as you mention are what I know won't be in the final game.
