In an interview with Monster Hunter World producer Ryozo Tsujimoto, it was explained why PC players will have to wait so long for their version to launch.

Thank you for not releasing a broken game. More devs should worry about this over meeting a deadline. First day owners of a game should not be used as beta testers unless they are aware they are purchasing an unfinished product.
