I've watched/read many pieces that claim PES2017 is the better game. Has anyone tried both demos and can elaborate fairly? pros and cons?

Had Pes 2017 since on 08/September and have been playing the game every day since then, it's so good and fun. Just add the option file and you're all set. As for Fifa 17 demo it's somewhat a little more fast paced, graphics and animations are great too. But honestly I was never a Fifa player.

Pros for 2017
+ Visuals
+ Animations
+ Impressive AI
+ GREATLY improved GKs
+ Gameply fluidity

Cons:
- Commentary (AGAIN!!)
- Online lag with some opponents, PvP of course...
- Licenses, which can be fixed by downloading a 78 Mbs file

Been a fan since Intl Superstar Soccer 64. But I jumped the bandwagon to FIFA during the PS3 gen. This gen PES is back and coming out with a vengeance. Owned all PES games since PES2015 and a couple of FIFAs. Tried both demos. Here's what I think. PES 2016 was incredible! It was fast paced and exhilarating. PES 2017 is slightly upgraded, not a big leap. The game is slower paced and more tactical with advanced AI. This makes it incredibly fun but in a slightly different way than 2016. I'd say its more sophisticated.
FIFA on the other hand is really fun. I did like it and I thought the graphics and colors were amazing. The game is great but for some reason its not as rewarding or as fun as PES. I think because of the handling and AI. PES is just so nice and has an amazing feel. I really don't think there's a huge gap between them. I own PES but might pick FIFA as well. They're just slightly different.
You should look into the game modes. Those might be the ones that will sell one over the other for you. FIFA looks to have a promising story mode. PES has an indepth GM mode where you trade and check your finances. Its too elaborate for me because I play on the pitch and don't follow the players as close to keep track, and I don't want to make big decisions when I'm just playing games :D I do enough of that in real life.

I think PES2017 is much easier to pick up and play, and you'll start enjoying it from the off. Fifa on the other hand, as with previous versions takes a little more getting into if you're not familiar with it. I don't think people realise how important the custom tactics are on Fifa, and how much control it can give you. They seem to have improved the tactics on PES a lot this year which is welcome. Two things I disappointed with on PES are that they haven't really improved the defending, and you can still do a rainbow flick by double pressing R3 (far too easy). Fifa's graphics look much better this year, particularly with more realistic lighting and better anti-aliasing. Seems to be harder to counter attack and exploit the width, so the balance has shifted towards physical play slightly rather than pace, although it's harder to tell how this will pan out when you're just playing against the AI.
