Goldeneye always does it for me, although it feels incredibly dated. For a niche one, the original Cossacks games on PC. Used to absolutely adore those, and have some fantastic memories of epic battles and grape-shotting hordes of infantry with my cannons :)
Goldeneye is one of - if not the only - favourite of mine on the list.
Some really good choices though.
