GRID's Executive Producer has spoken on the Codemasters forums regarding the PS3 version, and the improvements we can expect next week compared to the recent demo version.
The first improvement is that each and every frame is now v-synced, for a rock solid display with no tearing. Secondly the PS3 frame rate is 30fps, 99% of the time, which is great news.
Thirdly, there was no 'lead' platform - each version of the game had dedicated teams to get the most out of each of them - and finally the retail PS3 version has some extra performance improvements since the demo as they were tuning the game right to the last minute. In addition, the developers also have some further improvements lined up in a patch that should be out soon after release.

I firmly believe GRID would have run at 1080p 60 fps on PS3 had it been PS3 exclusive
since the ultrarealistic GT5P runs at that rez
