You were. It took me around 15-20 minutes and I was lucky enough to actually walk into his sniping point and use CQC to attack. If it took you around 5 minutes, that's a pretty lucky go.
I don't remember the Jerghinga boss fight being that long, although that probably was because I was way too entertained to notice the time flying by. XD
And right now, I'm playing Metal Gear Rising... and I'm stuck on that goddamn Senator boss fight. A couple nights ago, came across that dude, spent more than 1 hour trying to beat it, without avail, and I went to sleep crying. I think I'll tackle him on saturday morning, once I'm well rested and without any job / wife / life pressures. :P
The Legend of Dragoon's final boss was almost an hour long if I remember correctly.
Sephiroth from Kingdom Hearts 2 literally took me a whole night to beat.

Where is Absolute Virtue? The first time he was beaten, it took 18 players and over 18 hours to beat him.
If we're talking strictly single-player, I'd add the final colossus from Shadow of the Colossus.
They could have had the end boss from The Guardian Legend and Nightmare from Devil May Cry in there too.
