It does matter. The problem is... a good deal of people don't bother to go further than their TV's when it comes to audio.
Sound Design is so underrated. The problem is that most gamers don't have it setup to a proper surround sound system. My first experience with a game setup to a 5.1 surround sound system was MGS2 on the PS2. I was blown away when I heard the background sound of the rain pouring down. My next landmark experience was playing BF2 on a 7.1 setup. I don't believe it was fully supported, but with the sub-woofer under my chair and speakers all around me, I heard and felt a jet flying from a distance and whizzed passed me.
