I guessing most will play in Fist Person. I prefer that myself. However, Bethesda has done a great job at making the Third Person View feel less generic and more action oriented.
3rd person for movement is a lot of fun, you get to see your kick a$$ character and the animations are better. but if i'm climbing i usually go back to 1st person since it starts looking ridiculous. for combat and dialogue 1st person is definitely better. but it sucks when you start talking to an NPC in 3rd person and can't go into 1st person mode.
First person with fov 80 seems to best. The normal 75 seems to close.
I use 3rd person. 1st person just feels odd for me in anything other than a shooter. I got to 1st sometimes to look for loot cause its easier to click on stuff but skyrim's 3rd person view is good and feels like an action game.
Mostly first person. I use the third person view when I'm sneaking and want to look around a corner or just to zoom in and out and see how cool it all looks from different viewpoints. I zoom out to show my character and whatever follower I have with me at the time when I save my game. It's like a little epic screenshot, speaking of which I wish I could save screenshots to the XMB.
I am the same way with my save pics, ever since TES III Morrowind.

1st person 100% of the time. One of the best things about Elder Scrolls, is getting immersed into the world. Using 3rd person, you destroy that. Don't know why anybody would want to play in 3rd person, just destroys immersion.
From a role-playing look at things it increases immersion for me. It helps me to better learn the character I'm RPing as by looking at them and growing with them. I only use first person if I need to zoom on something, when I'm playing an archer, or sometimes when sneaking. Although I did I have to change the default FOV of first person, it felt too zoomed for me. So I guess I play in 3rd like 85% of the time.
third person all the way, otherwise i would never play it. rpgs are meant for thir person, not 1st. Draogon age origins and witcher 2 just prove this even more. skyrim is amazing, but i would not be playing if it had shitty third person animations like oblivion

1st person for battle, third person for safe mountain climbing and to see what giants might be chasing me.
