Probably my favorite MMA game ever made (that this article doesn't list, probably because it wasn't released outside of Japan) is Garouden Breakblow: Fist or Twist. It's based off the manga Garouden and it pits fighters against each other. While a lot of the moves are exaggerated, it has a very realistic feel to the game and a lot of the submissions look so much more painful than in games like UFC Undisputed. One thing I love about Garouden Breakblow is that the healthbars are shared, so it's also a game of tug-of-war, so matches can go on for a long time. In the video I've included, skip to 2:47. That match is so awesome. You'll see moves like the Anaconda Choke, Mounted Punches with Armbar, Kimura, Triangle Choke and so on.
