I always go Yuna, Aerith, Rikku, Rinoa, and for some reason Vanilla, Ashe, Cindy, Lunafreya, Quistis

thats pretty accurate actually, kefka is a deserved third place since Gilgamesh amd Sephiroth are well known. Kefka is too but you know.
Funny how Gilgamesh is more memorable than the final boss, ExDeath. Gilgamesh had a better theme song ;)
Seeing as this list includes optional boss fights, those were always my favourites. Long, epic battles like Ruby/Emerald Weapon, Yiazmat, Shinryu, various Omega/Ultima weapons, Ozma, Nemesis. Those always stood out to me because you had to master the game to beat them.
I always liked Siegfried from FFVI. It was a really cool idea to have you fight the fake one, then come to find there's a real one that's actually strong.
