The thing is, graphics are something that can be seen/measured/observed.
That is not your opinion, that is you being dismissive/downplaying.

That being said, the game runs and looks amazing. I'm not gonna go as far as saying it's the best thing I've ever seen, but it's definately impressive for something in the Alpha stage. UC4 as it is now, is matching, if not besting, most new generation games on the market with a year's worth of development left. ND really showing their skill.

Considering both this and Halo 5 are running at the resolution / framerate they're at (1080p @ 30fps UC4, 720p @ 60fps H5), and as you said look like a remaster (aka a better looking version of the last gen game), and still have nearly a full year to go, makes you sound and look ignorant.

This demonstration was a pure technology based showing starting with gameplay improvements in every way, amazing Anti-Aliasing for a console game, Incredible lighting w. global illumination (when he walks through the caves everything reacts to his light source), unrivaled animations, much better AI, destructible cover making combat more dynamic, incredible foliage and foliage density, solid texture work already, seamless transitions, and possibly the best in-engine character models ever seen in a game.

Graphics are not the most important thing a year off from launch it's getting the game up and running and to see something this polished already is impressive alone. On top of that the demo was 1080p @ a nearly locked 30fps. It already looks as good overall as Tomb Raider Definitive Edition (which is comparable to the PC version, which is a PC benchmarking game) and in many cases it looks better. And once again Uncharted still has a year of development to go, and you're complaining about graphics. Once again ignorant.

I do agree this is incredible. I really strugle to understand how some people can be 'disapointed' with the graphics. I mean it looks so good I have no word

Because people just like to troll honestly. Everyone I've talked to, my friends and people at psx, were blown away.
