A way so you don't have to keep charging your staffs with soul gems as a mage. Very unfair how a warrior gets away with not repairing his weapons like in the last games but a Mage has to keep recharging his weapon of choice, it's very off putting if you want to be a mage.
More variation in spells and unqiue ones....water, poison, earth, wind, mind control, decoy etc. Maybe the spell maker can make a comeback
Acrobats/Athletics to comeback and be more involved with the thief skill. Lets us climb up moutains, houses, backflips etc
Proper unqiue weapons where you have to do really hard quests or explore hard locations to find them. Think Fallout 3

I could go on, theres little things throughout Skyrim which bug me that they've been taken out or still havent been added.
Have you seen the spells, weapons, armor, etc that are available via mods on the PC?
It can be done.
At least I don't have to do it anymore. I have unlimited magicka for everything and pretty much plow through enemies.
Consoles don't have mods because thats another thing they didn't do this time.

Modders usually do a better job than bethesda, the HD textures pack is 2x-8x better than bethesda's texture pack. The modders make better armors, better monsters, better dungeons, etc.
Skyrim is now Bethesda's cash cow till the MMO comes out next year.
People complain about everything these days...
