If a game is in a first person perspective, how else are you going to make a game besides making it a shooter, a RPG like the Elder Scrolls? Heck, even most modern Third person adventure games are shooters like Uncharted, Tomb Raider, and even GTA to a certain extend.
When people play a game, they want action and the only way to perform that task in a 3D environment is either with a gun, sword or a fist and guns offer the most opportunity for action interaction so most developers are keen to continue to use that formula when developing a game. As long as the story is good like Bioshock Infinite, and/or the MP aspect is great like the Halo series, then that is what matters.

I feel like almost every single genre is getting boring. This whole instant gratification thing is ruining gaming.

Well, it depends on what kind of first person shooters we're talking about. We have to make a divide in first person shooting between first person shooters and modern military shooters. The difference between FPS and MMS comes down to what the content is.

Normally, certain first person shooters contain a difference compared to other shooters. Whether the uniqueness comes in the form of story or gameplay, the first person shooter that functions well with those elements and show creativity leave a good impact.

Modern military shooters, on the other hand, don't really leave much to the imagination. We have three series (one of which is shelved now) that practically embodied the mundane and typical of what gamers get. The more you see of them, the less impressive they are and more alike they get. So, modern military shooters are getting boring. True first person shooters are great when they are done well.

"Whether or not it works is almost irrelevant, it would be encouraging to simply see some desire to innovate."

That I just flat out disagree with. A game needs to function regardless of whether they have "some desire to innovate". The Walking Dead: Survival Instinct had a couple of cool ideas, but it's a buggy, poorly designed mess. If gameplay and graphics hinder innovation, then the game suffers no matter what.
