Wow when I saw this I was about to make a comment about how they missed the Chrono Trigger covers by Moonbow music. But they actually had it. Honestly when I first heard them I couldn't believe how good they played the songs.

I just found those guys about a month ago, and yes, they are so, so awesome. And they look like they're having so much fun too, which really comes through in the music.

This list is incomplete. Sorry but the absolute best video game cover artist is Katethegreat19 on youtube or Erutan as she is called. She does vocal songs for Xenogears which she wrote the lyrics in a Language she created herself. FF7 aeriths theme with her own lyrics, Chrono Cross Radical Dreamers covers and much much more.
